(Miyazaki, Japan) Miyazaki Prefecture is known for producing the best organic green teas in Japan. This Chumushi Shincha was made from the 1st spring harvest, whose leaves were rested for 3 months to enrich its notes and aromas.
It was made with the rare Harumoegi cultivar, the fruit of the labor of the Miyazaki Prefecture Agricultural Experiment Station since 1981. Harumoegi means the beginning of spring or spring buds, to honor and symbolize the fresh, spring-like aromas this cultivar offers.
When brewed, it starts with a citrus bouquet, followed by notes of fresh spring herbs, and leaves a rich umami finish in the mouth characterized by round and sweet cream notes. A grand cru!
