(Shizuoka, Japan) This tea is made from first flush spring leaves that have been fermented directly on the tree using a unique shading technique. Plucked one by one by hand, only the tenderest buds are chosen, then processed in a traditional manner. It comes from the Okuyakata cultivar, the result of the labor of the Kanaya Tea Research Center in Shizuoka, developed since 1958.
On the palate, it is light and fresh, with herbaceous and floral spring notes. It leaves a creamy, vanilla-like sensation as umami on the finish and a sweet touch. A grand cru!Preparation: 5g=250ml / 60C° / 1-2min / 3 infusions
