Matcha Quality Factors
1. Quality of leaves used;
The youngest and greenest leaves must be chosen for a better final product. The more affordable a matcha is, the more likely it is to contain leaves picked at a more mature stage.
2. Garden practices:

Permitted inputs in cultivation: We want as few chemicals as possible. Organic farming requires more care and is therefore more costly.

Shading Techniques: Tea plants should be shaded to increase chlorophyll and amino acid production, which ensures a richer taste.

3. The number of cultivars used
When harvesting leaves to prepare a matcha production, producers have the choice of using several cultivars or reducing the number of cultivars.
Much like single malt or blended whisky, we also see the same process with grapes and wine, one or more grape cultivars.
Using several cultivars allows for larger productions but will also create a more "neutral" flavor profile.
Choosing a single cultivar means that productions are smaller, and therefore more costly. However, this method allows for the development of a more characteristic flavor profile.
Our Premium grade Matcha series offers excellent quality at a very affordable price. This also makes it the most versatile of our Matchas, lending itself well to use in Jade Froths, lattes, and matcha treats.
On the other hand, our "single cultivar" series will allow you to discover more subtleties in the flavors of Matcha, but to fully appreciate them, they must be prepared only according to the traditional Jade froth method and, at most, as lattes.
4. Aging of leaves before pulverization (Kuradashi appellation)
Some artisanal productions will attempt the aging technique on "Tencha" type leaves.
Artisans will place the whole leaves in terracotta jars and bury them in the ground for a given period.
The final result of this process will create a product that has developed more umami*.
This method carries a risk, as a single bad bacterium settling in a jar or a little too much air can result in the loss of the contents. Again, this creates a rarity that can lead to a higher cost.

5. Pulverization temperature
There are several types of tea mills, and as with oils, the pulverization temperature affects the quality of the final product.
The pulverization should ideally occur with constant cooling to preserve the quality of the Matcha.
Many pulverized plants (reduced to powder) are sensitive to oxidation. With the plant's phytochemical constituents exposed to oxygen, the shelf life is much shorter.
Moreover, the subtle aromas of the plant will be more prone to evaporating. The powder "goes stale".
Some plants tolerate this process better, but Matcha is particularly sensitive to becoming oxidized and stale. This leads us directly to points 6 and 7.
6. Shipping duration
Despite careful packaging, if the transport to us is very slow, for example, if sea transport is used, which can take 3-6 months, we end up with a much less fresh and already partially oxidized product.
We take care to have our matcha delivered by air, to ensure minimal transport time and guarantee greater freshness.
*We receive our fresh matcha by air every month.*
Vacuum packaging is definitely preferred.
But once the packaging is opened; a container or bag that minimizes air exposure will be ideal.
Finally, to preserve the tea's freshness for as long as possible, it should be stored cold, as refrigerators have an adequate temperature to extend Matcha's shelf life.
Ideally, the opened package of matcha should be consumed within the month.
