Under the banner of the Tea Institute and Research & Development Center of Canada, this professional tea training program aims to provide students with a comprehensive foundation of concepts as well as various trending skills in the field. More than a sommelier, become a tea master with international level knowledge. With the ITCRDC - TEA MASTER LEVEL training, you will have the knowledge and expertise to lead workshops, advise and sell tea from the perspective of both its benefits and taste, as well as handle various accessories for tea preparation and service.


THE TRAINING INCLUDES:

 • [M1] TEA MASTER
10 hours (2 blocks of 5 hours, plus 30 min break, spread over 2 days)

PROGRAM TOPICS COVERED:

  • Origin of tea.
  • Evolution of tea – spread of tea through export (history), tea production, tea culture and customs.
  • Asian origin teas VS. English/Indian origin teas – tea plant varieties & cultivars.
  • Different categories of tea.
  • White tea; origin, production, preparation, tastes/aromas and benefits.
  • Green tea; origin, production, preparation, tastes/aromas and benefits.
  • Yellow tea; origin, production, preparation, tastes/aromas and benefits.
  • Oolong tea; origin, production, preparation, tastes/aromas and benefits.
  • Red tea; origin, production, preparation, tastes/aromas and benefits.
  • Aged tea; origin, production, preparation, tastes/aromas and benefits.
  • Dark tea; origin, production, preparation, tastes/aromas and benefits.
  • Different types of materials used to prepare and consume tea.
  • Storage & preservation of tea.

 

• [M-STC] TEA ROASTING AND BLENDING SPECIALIZATION
5 hours (plus 30 min break) (M1 prerequisite)

PROGRAM TOPICS COVERED:

  • Reasons and impacts of tea roasting: taste/aromas, benefits, advantages.
  • Analysis and comparative tasting of existing roasted teas on the market.
  • 3 roasting techniques (theoretical and practical).
  • Analysis and comparative tasting of various teas, herbal teas, and ingredients used for tea blending.
  • Theory and practice of tea blending.


 
• [M-SC] TEA CEREMONY SPECIALIZATION
5 hours (plus 30 min break) (M1 prerequisite)

PROGRAM TOPICS COVERED:

  • Introduction to the Chinese Gong Fu Cha tea ceremony (theoretical and practical).
  • Introduction to the Japanese Chanoyu tea ceremony (theoretical and practical).
  • Introduction to the Japanese Senchado tea ceremony (theoretical and practical).

 

 

Course notes included, certificate awarded upon completion of the course.
Certification by ITCRDC.
