Our world-class, certified Japanese tea master instructors offer matcha tea training under the ITCRDC (Tea Institute and Research & Development Centre of Canada). The layman style, 3-hour program is both informative and enjoyable – suitable for beginners and professionals alike. The content taught will give students knowledge above average of professionals working in the matcha tea industry.
► A certificate of completion and recognition of knowledge will be awarded to you with the professional title: Specialist in the field of matcha tea.
PROGRAM
• ORIGIN, PRODUCTION, HEALTH BENEFITS
Learn about the origin of Matcha and its benefits. You will then have the opportunity to make your own Matcha powder by grinding Tencha tea leaves using a traditional stone mill and taste it.
• TASTING & ANALYSIS OF QUALITIES, TASTES AND AROMAS
The tea discovery and tasting portion of the workshop will allow you to try, in evaluator mode, 5 matchas (1 barista grade, 1 ceremonial grade, 3 grand cru ceremonial grade) from our exclusive imports. Through these tastings, you will discover the cultivars as well as the world of matcha's tastes and aromas; thus deconstructing the myth of matcha that tastes only grassy, astringent, and marine, as found on the market.
• USAGE OF DIFFERENT MATCHA QUALITIES, FRESHNESS & STORAGE
This part of the program will allow you to better understand the strengths and weaknesses of each matcha quality and their uses. Furthermore, the secrets that the tea industry doesn't reveal about matcha freshness and storage will be unveiled.
• THE ART OF PREPARING & DRINKING CEREMONIAL MATCHA
In the finale, you will be able to choose one of the ceremonial matchas you tasted. Under our guidance, you will learn how to prepare and drink it ceremonially in the Usucha style. A traditional Japanese pastry of the moment will also be served to accompany your matcha.
